Ingredients

  • 2 cups Old fashioned rolled oats
  • ½ cup Pecans
  • ¼ cup Pumpkin seeds
  • ¼ cup Dried strawberries
  • ⅓ cup Honey
  • ¼ cup Melted unsalted butter
  • 1 tsp Vanilla extract
  • 1 tsp Cinnamon
  • ½ tsp Salt

Instructions

  • Preheat oven to 350℉ and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the rolled oats, pecans, and pumpkin seeds.
  • In a medium mixing bowl, combine honey, melted butter, vanilla extract, cinnamon, and salt. Whisk together until all ingredients are fully combined.
  • Pour the wet mixture into the dry ingredients and mix with a spoon until oats, pecans, and pumpkin seeds are fully coated.
  • Spread the granola evenly across the baking sheet, then use a spoon to gently press it into an even layer.
  • Bake on the middle rack for 20 mins or until golden, stirring at the halfway mark. Press the granola down into the pan again before placing back into the oven to finish baking.
  • Remove from the oven and let the granola rest undisturbed until completely cooled. For at least an hour.
  • Break granola into desired size clusters and add the dried fruit or any other optional add-ins. Store granola at room temperature in an airtight container for up to 1 month.
