- 4 cups Old fashioned rolled oats
- 1 cup Sliced almonds
- ½ cup Pumpkin seeds
- 2 tbsp Chia seeds
- 1 tsp Cinnamon
- ½ tsp Salt
- ½ cup Honey
- ½ cup Coconut oil
- 1 tsp Vanilla extract
Preheat oven to 350℉ and line a large rimmed baking sheet with parchment paper.
In a large mixing bowl, combine rolled oats, pecans, pumpkin seeds, chia seeds, cinnamon and salt. Stir to combine.
In a medium mixing bowl, combine honey, coconut oil, and vanilla extract. Whisk together until all ingredients are fully combined.
Pour the wet mixture into the dry ingredients and mix with a spoon until the dry ingredients are evenly coated.
Spread the granola evenly across the baking sheet, then use a spoon to gently press it into an even layer.
Bake on the middle rack of a preheated oven for 10 mins. Then remove the pan from the oven and stir the granola. Press the granola down into the pan again before placing back into the oven to finish baking. Bake for an additional 10 mins until slightly golden.
Remove pan from the oven and let the granola rest undisturbed until completely cooled. For at least an hour.
Break granola into desired size clusters and add any optional add-ins. Store granola at room temperature in an airtight container for up to 1 month.

The Best Healthy Granola Recipe Tips:
-
- Crunchy Clusters: To get large, crunchy clusters, press the granola mixture down with the back of a spoon onto the parchment-lined baking sheet halfway through baking. Also let the granola cool completely undisturbed on the pan for at least 1 hour. It may seem soft right out of the oven, but as it cools, it hardens into big, crunchy clusters.
- Baking pan: A basic half sheet pan is ideal for the amount of ingredients on this recipe. The ingredients should be spread out enough to bake through but also touch in order to form clusters. Be sure to line your pan with parchment paper so the honey sticks to the oats and not the pan.
Storage Tips:
- Store: place granola in an airtight container for up to one month for the best shelf life.
